Here’s a simple recipe to make Tandoori Chicken at home:

Ingredients :


1. Chicken: 4 pieces (leg or breast)

2. Yogurt: 1 cup (thick)

3. Lemon juice: 2 tablespoons

4. Garlic paste: 1 tablespoon

5. Ginger paste: 1 tablespoon

6. Tandoori masala: 2 tablespoons

7. Red chili powder: 1 teaspoon (adjust to taste)

8. Turmeric powder: 1/2 teaspoon

9. Coriander powder: 1 teaspoon

10. Cumin powder: 1 teaspoon

11. Garam masala: 1 teaspoon

12. Salt: to taste

13. Oil or Butter: 2 tablespoons

14. Food colour (optional):

 

A pinch of red or orange food colouring Preparation:-

Steps :

1. Prepare the Chicken: Wash and pat dry the chicken pieces. Make deep cuts/slits on the chicken to allow the marinade to penetrate.

2. First Marinade: Rub the chicken with lemon juice and a pinch of salt. Let it sit for 15-20 minutes.

3. Make the Marinade: In a bowl, mix yogurt, garlic paste, ginger paste, tandoori masala, chili powder, turmeric, coriander powder, cumin powder, garam masala, and food colouring (if using).

4. Marinate the Chicken:

Coat the chicken pieces well with the marinade, ensuring the slits are filled with the mixture.

Cover and refrigerate for at least 4 hours (preferably overnight for the best flavour).


Cooking Steps :

1. Grill/Oven Method:


Preheat the oven to 200°C (400°F).

Line a baking tray with aluminium foil and grease it lightly. Place the marinated chicken on the tray. Brush the chicken with oil or melted butter. Grill for 25-30 minutes, turning occasionally and basting with oil/butter, until the chicken is cooked and slightly charred.


2. Stovetop Method:

Heat a non-stick pan or grill pan with a bit of oil. Cook the chicken on medium heat, turning occasionally, until fully cooked and charred. Tandoor/Barbecue Method (if available):

 
Place the chicken in a preheated tandoor or on a barbecue grill.
Cook for 15-20 minutes, turning and basting with butter, until tender and smoky.
